Y’all I love making my own homemade mayonnaise because I know exactly what’s in it and I love sandwiches. But I try to eat a Keto diet – high good fats, high protein, and low-carb diet as much as possible. Which isn’t easy for this carb-loving gal.

Keto Homemade Mayonnaise & BLTs on Bell Peppers
Yields 4 Sandwiches
Ingredients
Low Carb BLT
- 4 Bell Peppers
- 1 pound bacon
- ½ a head of iceberg lettuce
- 1-2 tomatoes
Homemade Mayonnaise
- ¾ cup extra virgin olive oil
- 2 medium eggs
- 1 tablespoon lemon juice
- 1 teaspoon yellow mustard
- ¼ teaspoon Himalayan pink salt
Directions
- Prepare a baking sheet with parchment paper.
- Place a layer of bacon across the sheet and place it in the oven.
- Turn oven to 375 degrees. (No need to preheat, put bacon in while the oven is heating)
- Bake bacon for 30-35 minutes, draining grease regularly, or until you reach the desired doneness.
- Wash and dry bell peppers, then cut off the tops and bottoms and remove seeds.
- Cut peppers in half, lengthwise.
- In a blender or with a hand mixer, add all ingredients and mix until a thick consistency.
- Wash and slice tomatoes.
- Wash and pull layers off of the lettuce.
- Spread mayo on each pepper half, then layer the bacon, lettuce, and tomato on top.
- Serve and enjoy!
Note: Homemade mayo made with eggs will last for three days in the fridge.

Homemade mayonnaise is really easy to make and you know exactly what is in it. Add it to a low-carb BLT and you have the perfect sandwich.
And I do love a good sandwich.
However, I don’t love the carbs in bread.
Well, I love bread, but bread doesn’t love me. So, I’m always looking for low-carb options for sandwiches.
I use lettuce often to replace bread, like lettuce wraps. But using bell peppers is another great way to make sandwiches. Especially if you want a sturdier sandwich. Bell peppers are good for you and only have only 6 grams of net carbs per serving.
They are high in vitamins A and C and are anti-inflammatory. Making them a much healthier option to bread for sandwiches.

I enjoy BLTs not only for breakfast or brunch but for lunch and dinner, too. You may not think of BLTs using bell peppers in place of the bread as a breakfast sandwich, but I think these BLTs work great for breakfast.
They are great anytime, in my opinion.
