It’s back to school time here but even though summer break may be over, the heat of summer is not. So I’m still enjoying salads. I like to incorporate protein in my salads that are plant-based, especially in the summer.
I usually opt for vegetarian options like hard-boiled eggs or beans. Sometimes I’ll go with lean chicken or tuna, though. One of my favorites is a white bean and farro salad.
I also like incorporating whole grains in my salads. By adding both a protein and whole grains you have a salad that is a meal.
One whole grain I’ve been trying lately is farro.
What is Farro?
If you’re not familiar with farro it is an ancient grain, dating back to the Egyptians. It’s similar to rice, but farro is not only a whole-grain but a protein. So this White Bean and Farro Salad is really protein-packed and perfect for anyone on a low-carb, high-protein diet.
You can buy farro online or at stores like Walmart in the baking supply aisle near the flour and meal. You buy farro dry and cook it. Note that pearled farro takes longer to cook.
Farro is definitely a weight loss friendly food. It’s good for you and leaves you feeling fuller quicker and longer… so you won’t be as apt to overeat.

White Bean and Farro Salad w/ Red Wine Vinaigrette
Salad
Ingredients
- 1 cup uncooked Farro
- 1 can white beans, drained and rinsed
- 1 cup kale, torn small by hand
- ½ cup dried cranberries
- ½ cup pepitas
- 4 ounces feta, crumbled
Dressing
Ingredients
- ½ cup red wine vinegar
- ½ cup olive oil
- 1 teaspoon dried parsley
- ½ teaspoon salt
Directions
- Prepare 1 cup Farro as directed on the package.
- While that is cooking, prepare the dressing.
- Add all dressing ingredients in a small mixing bowl. Whisk until well combined and refrigerate.
- When Farro is done, rinse with cold water until cool.
- In a large mixing bowl, add Farro, white beans, kale, feta, cranberries, and pepitas.
- Toss until mixed.
- Pour dressing over salad, toss again and serve.
Tip: To make this salad up the night before, leave out feta until right before serving.
