Summer Salad – Strawberry Spinach Salad Recipe

Food 466resized In the summer, I enjoy eating lots of salads.  It is too hot to be doing a lot of cooking and heating up your kitchen.   For summer recipes, I like to keep it light or make use of the grill.   In fact, I classify many recipes by seasons.  And summer time makes me think of salads.  If you are like me and like salads, try this strawberry spinach salad:


1 package baby spinach or mixed salad greens
1-pint fresh strawberries 
½-cup walnuts
Raspberry vinaigrette dressing
¼-cup crumbled feta cheese


In a large bowl, toss the spinach with blueberries, walnuts, and dressing. Top with crumbled feta cheese to serve.

I hope you enjoy this recipe.  It is an easy recipe that can be thrown together for a light lunch or as a side salad with dinner.  It is a simple recipe that is fresh and delicious and perfect for a hot summer day!  Not to mention healthy.  You could also substitute the strawberries for your favorite fruit.  I think blueberries would be good (in fact, I think I'll try that myself).  If you have a recipe for a homemade raspberry vinaigrette recipe please share it with us.  Hope to hear from you!  Enjoy Life!!!
