I love the idea of combining two dishes together (yeah, I'm one of those people that like to mix foods… like mixing my corn into my mashed potatoes). I've eaten this family recipe, but haven't made it myself, yet. I will be making it next week. Yum!
POTATO MEATLOAF
Ingredients
4 c. potatoes, thinly sliced
1 1/2 lbs. ground beef
3/4 c. oats
2 eggs
1/2 c. chopped onions
1/2 c. chopped green pepper
2 tsp. salt
1/4 tsp. pepper
1 c. tomato juice (I think I'll add another 1/2 cup or more when I make it)
Arrange thinly sliced potatoes in greased baking dish. Mix all other ingredients thoroughly. Pack firmly on top of potatoes. Bake at 350 degrees for 1 hour. Let stand 5 minutes before serving. Serves: 8.
