My husband and I started a Keto friendly diet on January 1st. We aren’t going hard-core Keto (I’m just not disciplined enough to track macros), but keeping it Keto friendly and low carb.

I want to keep the fats and proteins healthy fats and proteins, like olive oil, nuts, and avocados. And I want to keep my carbs, healthy carbs. I’m eating little to no sugar unless it’s a sugar substitute, and I’m even keeping that to a minimum.

I’m already down four pounds in six days, so I’d say I’m off to a good start.

One thing we love, especially my husband, is sauces. A lot of sauces aren’t very keto-friendly, usually containing a lot of sugar. So finding a sauce recipe that’s low carb makes us happy.

This easy keto peanut sauce using RX Nut Butter that I picked up from Walmart is perfect.

Easy Keto Peanut Sauce

Ingredients

  • 1/4 cup RX Nutter Butter (I used peanut butter)
  • 1/3 cup full-fat coconut milk from a can
  • 1-2 tsp chili garlic sauce
  • 1 tbsp Swerve (or other low-carb sugar substitutes)
  • 1 tsp soy sauce
  • 1 tsp sesame oil (or coconut oil, or olive oil)
  • 1/2 tsp Thai Red Curry Paste

Directions

  1. In a small microwave-safe bowl, warm the peanut butter. Be very careful, you just want to barely warm it.
  2. Whisk in the chili garlic sauce, Swerve, and soy sauce. 
  3. Put a small pan over medium heat and warm the oil. Add the Thai red curry paste and cook until fragrant. Scrape the oil and curry paste into the bowl with the peanut butter and whisk to combine.
  4. Slowly pour the coconut milk into the peanut butter mixture while stirring with a whisk.
  5. Taste and adjust seasonings to your taste. I find it perfect, but you may want it spicier.
  6. Serve room temperature or slightly warmed.

Note: If it needs more flavor you can add a little more sweetener or a squeeze of lime or lemon juice. You can also add a little fish sauce or salt.

This easy keto peanut sauce is great with chicken satay but you can simply top pan-seared chicken breasts with it to give your chicken more of a pop. This peanut sauce is so full of flavor with the RX Nut Butter in Peanut Butter. You can find other recipes using RX Nut Butter here.

If you are doing a keto or low carb diet you can add fried cabbage in butter like I did for a side dish with this recipe. Zucchini noodles would work great, too. Of course, if you aren’t doing keto, noodles or rice would be great with this recipe.

An easy, delicious Keto peanut sauce that is full of flavor but low-carb, with only 1 net carb per serving. This Keto friendly peanut sauce is so rich tasting it's hard to believe it is so low carb.
