Coconut Fruit Dip & Strawberry Mango Kabobs

I’m enjoying this summer so much so far and trying not to think too much about the fact that my son starts back to school in just under a month now. Ugh. But right now I’m living in the moment. We’ve been eating a lot of strawberries this summer and another thing I love is coconut.

We live near a fruit and berry patch and I love going there to pick fresh strawberries or buy them at a farmer’s market.

I’ve been experimenting with different ways to eat strawberries and thought a coconut fruit dip might be an excellent way to eat them. I added mangoes since my husband loves them. I’ve also recently made a strawberry lemonade and a strawberry walnut salad.

Coconut Fruit Dip & Mango Strawberry Kabobs

Ingredients

  • 1 mango
  • 12 strawberries
  • Kabob sticks
  • 1 tub light cool whip
  • 1 pkg. cream cheese-softened
  • 1 tsp coconut extract

Directions

  • Cut up fresh mango into 1 inch cubes.
  • Hull strawberries.
  • Alternate strawberries and mango onto kabob sticks.
  • Set aside.
  • Blend cream cheese with electric mixer until smooth.
  • Add in cool whip and coconut extract and mix until well combined.

Serve fruit dip with kabobs and enjoy!

These kabobs are a fun way to eat strawberries this summer and the fruit dip is creamy and delicious. Make it to eat with any of your favorite fruits and play around with different fruit kabobs.

You could make the fruit kabobs any time of the year using whatever fruits that are in season.
