I eat lots of salads in the summer. It’s too hot to do much cooking, and I don’t like heavy meals in the summertime. I’m also very busy, and like quick, easy meals.
So I love Suddenly Salad. I can make a light side salad to go along with a meal or as a hearty complete meal in and of itself. They have so many varieties to choose from, not to mention you can add your own ingredients to change it up.
The other day I tried the Red, White, & Blueberry Pasta Salad from the Betty Crocker site:

- 1 box Betty Crocker® Suddenly Salad® classic pasta salad mix
- Water and vegetable oil called for salad mix box
- 1 cup diced red bell pepper
- 1 cup blueberries
- 1/3 cup crumbled feta cheese
- Make pasta salad as directed on box.
- Stir in bell pepper and blueberries.
- Sprinkle with feta cheese.
- Refrigerate 30 minutes before serving.
- Cover and refrigerate any remaining salad.
It was delicious and made a great lunch. I’m looking forward to trying new ways to try the Suddenly Salads this summer. I do plan on making the Red, White, & Blueberry Pasta Salad to take to my m-i-l’s on July 4th.
