Carapelli Olive Oil Taste Test: Like a Fine Wine

I love Italian food. I would say it's safe to say I fix pasta at least three times a week. I also use a lot of olive oil — whether it's with spices and seasonings served for dipping with a good crusty bread, mixed with a balsamic or red wine vinegar for a vinaigrette dressing, used in pasta dishes or to lightly saute vegetables or seafood — olive oil is a staple in our home.

As part of my taste test, I was to do the "Four S's" (Swirl, Sniff, Slurp, and Swallow):

1. Swirl – By swirling the olive oil in your glass, you release the oil’s esters, which are the molecules that
contain the aroma.

2. Sniff – Now inhale deeply. The aroma is the key to the fruitiness of the oil. You should ask yourself is s it intense or is it more subtle?

3. Slurp – Sip the oil while “sipping” in a bit of air. This slurping action will emulsify the oil and help spread it
throughout your mouth. You can take note of the various tastes and sensations. Is it fruity, peppery, smooth?

4. Swallow – Once you swallow the oil, it should leave your mouth with no aftertaste. Again, take note of
any peppery or stinging sensation in your throat.

My results – The aroma was subtle, which I liked. I've never been fond of strong smelling olive oils. There was absolutely no aftertaste at all, and I found it to have a smooth, light peppery taste. My husband thought it had a more fruity aroma and taste.
