Strawberry Parfait Recipe made with Fresh Florida Strawberries #spon @FreshfromFL

One of my favorite fruits is the strawberry. Especially fresh strawberries. They bring back wonderful childhood memories — picking fresh strawberries with my grandfather.

It just so happens that my son’s favorite fruit is the strawberry. One of our favorite things to do in the summer is to sit on our patio in early summer and eat fresh strawberries. I hope I making a lasting memory with him like the ones I have with my grandfather.

Did you know in Florida, February is Strawberry Season? They even have the world famous Florida Strawberry Festival in February and early March! I don’t know about you, but that’s reason enough to go to Florida for me!

I enjoy strawberries in salads (and vinaigrette dressings) and on pancakes, but love strawberries in desserts. They offer a natural sweetness and succulence that is hard to beat. I enjoyed some strawberries dipped in chocolate for Valentine’s Day. One of my favorite strawberry desserts though, is a strawberry parfait.

This Fresh From Florida recipe is quick, easy, and healthy:

Florida Strawberry Parfait

Ingredients:

  • 2 cups fresh Florida strawberries, rinsed, hulled and sliced
  • 8 ounces low fat cream cheese, whipped
  • 2 tablespoons natural Florida sugar
  • 1/2 cup low fat vanilla yogurt
  • 4 graham crackers, crushed
  • 1 lemon, juiced
  • 4 sprigs fresh mint for garnish

Directions:

In a medium sized mixing bowl, combine whipped cream cheese, sugar and lemon juice. Fold the yogurt into the cream cheese mixture. In four wide mouth glasses, evenly layer cream cheese mixture, strawberries and crushed graham crackers. Garnish with sprigs of fresh mint. Serve chilled.

Yum, right? And as cold as it’s been here lately, I sure could use a Fresh From Florida Strawberry Parfait to give me the warm feeling of spring and summer.

  5. This looks really refreshing. The last few years, I’ve had a chocolate mint plant on my deck and have ‘snacked’ on the leaves. I haven’t found a recipe to actually use them in yet but I bet they would be good on top of this in place of the regular mint!

  17. Oh yummy! You could easily substitute any other berries that are in season, like blackberries or raspberries too!
